- Kale
- Red/Purple Onion
- Avocado
- Lemon
- Goat Cheese
- Cilantro
- Corn Tortillas
- Olive Oil
- Salt
- Red Pepper Flakes

- Peel the kale from the stem and chop into medium sized pieces
- Slice the onion into slivers
- Sauté the kale, onion, salt and red pepper flakes in the olive oil over medium-high heat until desired consistency
- Remove from heat and squeeze half a lemon onto the kale and onion mixture
- Serve kale and onion mixture into tortillas
- Top with chopped avocado, goat cheese and cilantro
- Serve + enjoy!
