Kale Tacos

Ingredients Directions
  • Kale
  • Red/Purple Onion
  • Avocado
  • Lemon
  • Goat Cheese
  • Cilantro
  • Corn Tortillas
  • Olive Oil
  • Salt
  • Red Pepper Flakes
  1. Peel the kale from the stem and chop into medium sized pieces
  2. Slice the onion into slivers
  3. Sauté the kale, onion, salt and red pepper flakes in the olive oil over medium-high heat until desired consistency
  4. Remove from heat and squeeze half a lemon onto the kale and onion mixture
  5. Serve kale and onion mixture into tortillas
  6. Top with chopped avocado, goat cheese and cilantro
  7. Serve + enjoy!
