Hearty + Healthy Veggie Chili

Ingredients Directions
  • 1 chopped onion
  • 3 chopped carrots
  • 2 chopped red peppers
  • 3-4 chopped/grilled portobello mushrooms
  • 1 can tomato paste
  • 1 can diced tomatoes
  • 1 can drained, rinsed pinto and kidney beans
  • Broth or water for thinning (to liking)
To Taste:
  • Chili Powder
  • Cumin
  • Cayenne
  • Paprika
  • Salt + Pepper
  • Cilantro
  1. Sauté onion, carrots and peppers in a little bit of olive oil until onions are translucent and carrots are no longer firm
  2. Add grilled mushrooms, tomato paste, diced tomatoes, beans and broth
  3. Add spices and simmer 20 minutes or until flavors have melded together
  4. Garnish with cilantro + enjoy!
