Collard Green Frittata

Ingredients Directions
Fresh from the Farmers' Market
  • 1 tbsp. Olive Oil
  • 1 medium Yellow Onion, chopped
  • 10 oz. fresh Collard Greens
  • 10 large Eggs, beaten
  • 1/3 c. grated Parmesan
  1. Preheat oven to 400 degrees F 
  2.  Heat oil in an ovenproof 10- to 12-inch skillet over medium-high heat 
  3. Add onion and sauté 5 minutes, or until translucent 
  4. Push onion to one side of pan and add collard greens 
  5. Cook until collards start to become tender, then stir together greens and onions 
  6. Stir eggs into collard mixture 
  7. Cook 5 to 7 minutes, or until edges are set 
  8. Sprinkle with Parmesan cheese 
  9. Transfer skillet to oven and bake 10 minutes, or until egg mixture is completely set 
  10. Slice into wedges + enjoy!
